Also known as Persona 3 the Movie, Persona 4 the Animation, Persona 5 the Animation, Persona: Trinity Soul, Persona4 the Golden Animation
The Persona watch order is easiest to follow by game, because each anime adapts a different Persona game set in the same world, and each has its own cast. Start with the four Persona 3 films (2013-2016), Spring of Birth to Winter of Rebirth, which follow SEES through the Dark Hour. Persona 4 the Animation (Episodes 1-25) moves to rural Inaba and a murder mystery inside the Midnight Channel; its true-ending episode, No One is Alone, comes right after. Persona4 the Golden Animation is an optional retelling, and The Factor of Hope is a recap film. Persona 5 the Animation (Episodes 1-26) follows the Phantom Thieves in Tokyo and finishes in two TV specials, Dark Sun and There's No Way I Can Be Okay With This!; The Day Breakers and two Blu-ray OVAs are optional. Persona: Trinity Soul (2008) is an anime-original story set ten years after Persona 3 and is listed last as an optional side story. Each game story stands alone, so you can also start at Persona 4 or Persona 5.
Each part stands alone: Persona 3 (4 films), Persona 4 (25 episodes plus the No One is Alone true ending), and Persona 5 (26 episodes plus the two finale specials).
In-world order is 3, 4, 5. Golden Animation, the recap film, Day Breakers, the P5 OVAs and Trinity Soul are optional.

AnimeChrono watch orders put every season, movie, OVA, ONA and special for a franchise in chronological story order, the order the events happen. When an OVA or movie takes place partway through a season, the episode range is split so it sits where it belongs. Entries you can skip are marked optional, and each order says where to start. Release order, sorted by air date, is a secondary view once every entry has a date. The orders began as a hand-curated set, and episode counts and air dates come from AniList. Fans maintain the orders from there. Any signed-in user can edit one. Edits from trusted contributors go live right away and the rest are reviewed first. Every change is versioned and can be reverted, and each order shows when it was last updated and last checked.
